Outside of wedding planning, Scott and I have been enjoying the summer. The second weekend in June, we attended an Engaged Encounters retreat. It was a requirement for us to get married in the Catholic Church, but it ended up being a great weekend for us.
I started classes for Graduate School. The only class that was open was a finance class, Intro to Derivatives… nothing like jumping in the deep end. It was a rough go at start, but not as bad as I thought. 4 weeks down, 4 more to go. Midterm is next week! Wish me luck!

Scott and I haven’t been to the movies in a really long time. So the following weekend, we decided to do a date night. We went to an early show at Chase Park Plaza and watched “Knocked Up” with Katherine Heigel and Seth Rogen. My review: absolutely hysterical, gotta go see it! I was laughing so loud that Scott had to tell me to quiet down my cackle. After the movie, we went for sushi at The Drunken Fish in the Central West End. It wasn’t as good as our usually sushi restaurant, Sekisui. So needless to say that will probably be my last time there. Since dinner wasn’t so great, we didn’t want to give their desserts a chance so we walked to Ben and Jerry’s… Yum-O. All in all, it was a great date and I told Scott that we had to do it more often.
For work, I am in charge of our Supply Chain Co-op Program. At the end of every 6-month term, we bring the co-ops in for their exit presentations and a team outing. I spent the majority of June coordinating this event. This gives the co-ops an opportunity to highlight the work they completed at their site. After the presentations, we all went to a Cards game. What was so great about this particular event was that my old buddies were back in town. Nick and Ben were in town. Nick moved out to Soda Springs, ID about 9 months ago and Ben has been in Augusta, GA for almost 2 years. Having them back in town was like old times.
For canceling on us the week before, Tim and Laura had us over for an evening. Not to say that the cancellation wasn’t for a good reason (Laura’s sister had her second baby.) We went over late afternoon on a Saturday so that Scott and Tim could do some manual labor on his basement. They drank some beers, cut some lumber, and hung some studs while Laura and I caught up on our HGTV and DIY. I got my baby fix with little Audrey. She is too cute and so good. After dinner, we busted out Risk where it lasted forever! But it all ended with Laura and me taking world domination right under Tim and Scott. They didn’t even see it coming!

Now we are up to speed, yesterday we had our friends, Nicolas and Ines, over for dinner. They both moved to St. Louis from Argentina back in December and ever since they moved, we have been talking about doing an empanada dinner. Well, last night was the night. While the boys were downstairs playing X-Box, Ines and I were slaving over the hot oven. It took us almost a couple hours to get them all ready, but boy-o-boy were they delicious.
Today, I have been spending most of it working on my Finance project and catching up on homework. Oh, what fun!!
